Yeah, you read that right!
This is probably (definitely) the best salad I’ve ever had in my life. I have to be honest with you and tell you that I am not a salad person. At all. I am vata dosha (check out this site if you are unsure of what dosha is – https://yogatraveltree.com/article/doshas-for-dummies/), meaning that to create balance in my life, my body needs warm, cozy foods and grounding foods. So, salad, not really so balancing for me.
This salad is just so damn good!
Arugula is tied for first for my favourite leafy green (spinach is so versatile!). But this stuff… It’s just so peppery and full of flavour. Mmm!! Mangoes are my favourite fruit because they’re beyond SWEET and remind me of being on a beach.
If you know me at all, you know that I don’t go by recipes or measure anything… So bear with me here!
Ingredients (serves 1):
- 1.5 cups arugula
- 1/3 cup cucumber (sliced)
- 1/2 medium mango (chopped)
- 2 large strawberries (sliced)
- 1/4 medium red onion (chopped)
- 1/2 medium tomato (chopped)
- 1/2 avocado (sliced)
- 2 tbsp white balsamic vinegar
- 1 tbsp olive oil
- juice of 1/2 lime
- lots of cilantro
In that order, layer all of the ingredients, finishing with the vinegar, oil, lime juice as your dressing with lots of chopped cilantro to taste (if you like it, that is!).
Next time I will probably add some chopped jalapeño to the mix as well… I think the kick would really suit it!
